I love cake. I love food and I love baking. It really is that simple. This is the best chocolate cake recipe ever.
In February, I was asked to make a chocolate cake as a birthday cake. I am generally terrible at cake baking but have been fine tuning my skills in recent years. I felt that all the cakes that I was making tasted the same and never really made me want to make them again. In the last year, I then discovered the joy of baking with oil instead of butter. It is probably much higher in calories (a fact that I don’t really care about!) but it keeps the cakes really moist and really spongy. I also find yoghurt works well in cakes too.
I googled something along the lines of ‘chocolate cake’ and this recipe came up. It is as it says on the title the best chocolate cake recipe ever. It is simple to make and cooks like a dream. The best part is that it stays fresh and moist for up to 6 days. I don’t keep it in the fridge as I find it dries it out and hardens it ever so slightly so it is currently sitting on my kitchen counter in a cake stand with a lid.
The first time I decorated it with Betty Crocker’s chocolate fudge icing and strawberries (fecking amazing!). This week I have make it twice and both times I used a buttercream icing on it. I love the contrast and it was so easy to make. Plus it was cheaper as Betty Crocker icing is about €7 a tub here and I just cannot justify that price. The first cake was for Alex’s playschool party so I only used the icing to sandwich the two layers together (I don’t think the teachers would be too happy if they were all hopped up on sugar all day!!). However, I completely iced the entire cake I made for us to have at home. I am not a master icer but I thought it looked good and Alex loved it, so that is all that matters.
The only thing to mention about the cake is don’t do what I did and pour the entire batter into one large tin as it takes well over an hour to cook the whole way through. The top burnt ever so slightly as it was in the oven for so long, but it was okay and I just cut the top off.
Please try this recipe out if you haven’t before. It is well worth your time. I promise you will be making it more than once.
