Emma’s Favourite (Quick and Easy) Banana Bread

I love bananas. I could easily eat them all day long, however, I only like them just as they begin to turn from green to yellow. Any sign of a brown spot and I won’t eat them. This has caused me some major arguments with Michael as we can end up throwing away bananas that I had forgotten about at the bottom of the fridge. One afternoon a few years ago I decided I would try my hand at making a loaf of banana bread. I love baking and honestly, I don’t get enough time to do it, so when I do have time to bake, I want to make something that is quick and easy. This recipe is exactly that and (in my opinion) it is foolproof – you just cannot go wrong.

Alex and Emma have a sweet tooth and are ALWAYS asking for something sweet but since I started making this luscious bread they are more than happy to give up everything from the shop in exchange for this.

Emma's Favourite Banana Bread

A quick and easy recipe for banana bread that the whole family will love.

Ingredients

  • 225 g granulated sugar
  • 114 g butter
  • 2 large eggs
  • 3 ripe bananas
  • 1 tbsp milk
  • 1 tsp cinnamon
  • 256 g all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

Instructions

  1. Preheat your oven to 170 degrees C. Butter a 2 lb loaf tin. 

  2. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add one egg at a time until mixed well. 

  3. In a separate bowl, mash the bananas with a fork. Add in the milk and cinnamon. In another bowl, mix the flour, baking powder, baking soda and salt together. 

  4. Add the banana mixture to the creamed mixture and stir until combined. Next add the dry ingredients and mix until the flour just disappears.

  5. Pour the batter into your prepared loaf tin and cook for between 1 hour and 1 hour 10 minutes - a toothpick inserted into the center should come out clean. Leave in pan for 15 minutes to cool before removing and then allow to cool completely on a wire rack before slicing. 

  6. Serve with ice cream, butter, honey, or my personal favourite - Greek yoghurt.
